NOW,
I am showing you the ways to make Achar!
A healthy tidbit that could be eaten with heavy meals or as a replacement for cookies.
The quantity of ingredients (like sugar, vinegar, etc) mentioned below is to make achar using 2 cucumbers.
So, you got to estimate the ingredients yourself if you are using more cucumbers or less.

FIRST
you need to prepare cucumber and cut them into pieces.
Quantity: 2 cucumbers.
Rub the cucumber with salt to soften it. Left it aside for about 5-10 minutes.

SECOND
while waiting the cucumber to get soften, cut the carrot into pieces.
Quantity: 3/4 carrot.
Same as the cucumber, you gotta rub it with salt to soften it. Left it aside for 5-10 minutes.

THIRD
While waiting for the carrot and cucumber, you can squeeze the lemon into juices.
Quantity: 1/2 lemon.

AND
also preparing the sauces using sugar, vinegar and chili padi.
Quantity of sugar: 8-9 tablespoons.
Quantity of vinegar: 8-9 tablespoons.
Quantity of chili padi: 5
*Depends on your taste*

Pour the lemon juices into the sauces and stir thoroughly.
Dry the cucumber and carrot by squeezing the extra salty water before putting them into the sauces.
Stir everything in the bowl evenly.
Taste it and add more sugar/ vinegar/ chili whenever you feel like to.

LASTLY
Put it into a jar and put into the fridge.

READY TO SERVE with peanuts.

Hope you like and enjoy it.
